Southwest Meatloaf1 pound Nolan Ryan's All-Natural ground sirloin or lean ground beef 40 saltine crackers crumbled fine 1 can (10 oz.) Rotel green chilies and tomatoes ½ cup of finely chopped onion ½ cup of finely chopped green bell pepper ¼ cup of milk 1 large egg 1 cup salsa 1 tablespoon olive oil, for pan
Directions Heat over to 350 degrees.
Sauté onion and green pepper in small amount of olive oil until just tender. Combine all the ingredients; shaped into a loaf and place in a lightly greased 9 x 5 x3 inch loaf pan. Cover with foil and bake at 350 degrees for 1 hour. Remove from oven and remove the foil. Bake uncovered for 15 min. more. Top with salsa. Makes 4-6 servings.
