Southwest Meatloaf1 pound ground sirloin or any lean ground beef ½ sleeve of saltine crackers crumbled fine 1 can Rotel green chilies and tomatoes ½ cup of finely chopped onion ½ cup of finely chopped green pepper ¼ cup of milk 1 large egg
Directions Sauté onion and green pepper in small amount of olive oil until just tender. Combine all the ingredients; shaped into a loaf and place in a lightly greased 13x9 inch pan. Cover with foil and bake at 350 degrees for 1 hour. Remove from oven and remove the foil. Bake uncovered for 15 min. more. Top with salsa. Makes 4-6 servings.
