Texas Roast TenderloinPrep Time: 5 minutes Cook Time: 50 minutes Serves: 8-10 people
Ingredients:1 (4lb.) beef tenderloin, trimmed 1 Tbsp. olive oil 1 Tbsp. Italian seasoning 1 tsp. ground black pepper 3 Tbsp. Parmesan cheese
Instructions:Preheat oven to 425° F. Rub the tenderloin with olive oil. Sprinkle surface of roast with Italian seasoning and pepper.
Place roast in shallow roasting pan in preheated oven. Cook 45- 50 minutes or until meat thermometer registers 145° F internal temperature.
Remove roast from the oven and sprinkle with Parmesan cheese. Allow the roast to rest 10-15 minutes before slicing.
