Texas Red Rice and Sausage 

A flavorful, filling dish featuring all-beef sausage from Nolan Ryan's Beef.
Serves: 8

Ingredients
12 oz Nolan Ryan's Smoked Sausage (one package), cut into bite-sized pieces
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped green bell pepper
2 cups converted rice
10 oz can diced tomatoes with green chilies
15 oz can tomato sauce
8 oz water
4 slices cooked bacon, crumbled
1/4 tsp ground pepper
1 tsp sugar
Salt to taste

Instructions
Preheat oven to 350 degrees F. Sauté sausage until edges are browned. Drain well. Return sausage to pan and add onion, celery, and green pepper. Sauté over medium heat until the vegetables are soft. Add rice, diced tomatoes with green chilies, tomato sauce, water, crumbled bacon, salt, pepper, and sugar. Cook uncovered, on top of the stove over medium heat for 10 minutes.

Spray 9 x 13-inch casserole dish with cooking spray. Pour the rice mixture into casserole dish, cover tightly with foil. Cook until the rice has absorbed most of the liquid, about 1 hour. Serve hot. If a meatier dish is desired, add additional sausage to taste.
