While breed and quality grade influences tenderness, more than half of a steak’s tenderness score is influenced by production and handling of the cattle. Our tenderness process is USDA Certified so that we dramatically reduce product variability when compared to other programs.

We make sure all of our bases are covered:

  • Hand-select for quality and consistency.
  • Individually evaluate every beef carcass and hand-select for quality with the Smart Machine Vision BeefCam® to identify only the most tender beef
  • 100% natural, minimally processed with no additives or artificial ingredients; never pumped or injected
  • Nolan Ryan licensed feedyards follow strict feeding and handling guidelines
  • No antibiotics or growth hormones during the last 100 days prior to processing
  • Only USDA Yield Grades 1 and 2 and “A” maturity beef
  • Minimum 14 days aging and post-harvest E-Stim for tenderness
  • All products are raised and processed in the U.S.A.
